Jaime García Vallejo is a biologist, regenerative market gardener, and co-founder of Soilik.coop in Vitoria-Gasteiz (Basque Country, Spain). Following four years of international apprenticeships across Brazil, Argentina, France, Italy, and Spain, Jaime specializes in farm design, economic modelling and biointensive techniques adapted to Mediterranean regions. His cooperative operates on 5,000 m², employing three full-time workers with six weeks of annual vacation, while generating €125,000 in direct sales without resale. Operating within a municipal agroecological nursery, Soilik serves as a living lab, incubator, and consultancy.
